· 1 whole chicken (ideally organic or antibiotic free – lilydale is a good brand)
· 1 brown onion (diced)
· 3 garlic cloves
· Grated ginger
· 4 celery sticks (diced)
· 3 carrots (diced)
· 1 cup of additional veg of choice (optional)
· Handful of rice noodles or favourite GF noodles (optional)
· Organic chicken stock or filtered water
· 1tsp dried thyme
· 1 tsp dried rosemary
· 3 bay leaf
· ½ tsp of turmeric
· Fresh parsley
· Salt and pepper
· Slow cooker

1. Place all ingredients in slow cooker.
2. Cover with filtered water/chicken stock.
3. Set to low for 8hrs.
4. Once complete, pull the chicken out and shred with a fork or food processor, removing the bones. Also, remove bay leaves.
5. Serve with crusty sourdough 😊
Note: If not comfortable using a whole chicken, you can also use chicken breasts and shred them. I would recommend adding a bone broth or something in this case for the health benefits.
